If you’re looking for a fresh, flavourful dinner that comes together in under an hour, this Lemon Chicken recipe is about to become a weeknight favourite. It’s tangy, garlicky, a little buttery, and packed with bright citrus flavour. Perfect with rice, pasta, or a side of roasted veggies!
Ingredients:

4 boneless, skinless chicken breasts (or thighs if you prefer)

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup chicken broth
-
Juice of 2 lemons (about 1/4 cup)

1 tablespoon lemon zest

2 tablespoons unsalted butter

1 teaspoon dried oregano (optional)

Fresh parsley or thyme for garnish
Instructions:

Prep the Chicken: Pat the chicken dry and season both sides with salt and pepper.

Sear It Up: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 4–5 minutes per side until golden brown and mostly cooked through. Remove and set aside.

Make the Sauce: In the same skillet, add the garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth, lemon juice, and lemon zest. Scrape up any browned bits from the bottom of the pan (flavor gold!).

Simmer: Bring the sauce to a simmer, then stir in the butter and oregano. Return the chicken to the skillet and spoon the sauce over the top. Let it cook for another 5–7 minutes or until the chicken is fully cooked and tender.
