Chop Butchery began in 2015 as a family-owned and run business with one shop and a simple mission: to offer the highest quality meat with genuine, personalised service—both in-store and online. Today, we’ve grown across Sydney and the Central Coast, but we’re still hands-on in everything we do. From dry-aging in-house to crafting our own sausages and patties, our Richmond hub allows us to bring fresh, ethically sourced meat to families, food lovers, and businesses.

Dave Funnell

Dave is the founder and frontman of Chop Butchery—and if you’ve ever met him, you’ll know he’s not your average butcher. With decades of experience, a love for quality meat, and a sense of humour that’s as sharp as his knives, Dave has grown Chop from a single shop into a multi-store operation (complete with meat vending machines for when the cravings hit after hours).

He’s hands-on with every part of the business, from crafting gold-medal sausages to perfecting the dry-aged steak selection. If it’s behind the counter, it’s been Dave-approved. Known for his banter as much as his butchery, Dave brings big energy, bigger ideas, and a genuine love for the craft—meat, mates, and all.

Tanya Funnell

Tanya is the co-owner and behind-the-scenes force at Chop Butchery, keeping the business running smoothly while adding her signature dose of humour along the way. While Dave brings the big energy out front, Tanya brings strategy, structure and smarts—whether it’s launching 24-hour meat vending machines or making sure every store delivers that top-shelf Chop experience.

With a knack for logistics and a passion for people, Tanya drives customer satisfaction, champions the team culture, and helps bring Chop’s boldest ideas to life. Practical, witty and always up for a laugh, she’s the reason things get done—and the reason they’re fun while doing it.
