Oven Roasting: Preheat oven to 160°C (fan forced). Rub lamb with oil, salt, pepper, and herbs. Place in a roasting tray and cover with foil. Cook for 3.5–4 hours, then remove foil for the final 30 minutes to brown. Rest for 10–15 minutes before slicing or pulling apart.
