Slow Cook/Oven: Season generously. Sear on all sides over medium heat, then transfer to a slow cooker or oven dish with liquid (stock or marinade). Cook at 150°C for 4–6 hours until fork-tender. Rest before slicing.
Smoker: Prepare your smoker at 110–120°C. Smoke for 8–10 hours or until internal temperature reaches 90–95°C. Wrap in foil and rest for at least 1 hour before serving.
