BBQ/Stovetop: Bring to room temperature. Season generously. Sear over high heat for 2–3 minutes per side, then lower heat and cook to desired doneness. Rest for 5–10 minutes before serving.
Oven: Preheat to 200°C. Sear steak in an ovenproof pan for 2 minutes per side, then transfer to oven for 5–8 minutes or until cooked to your liking. Rest before serving.
