Slow Oven Roasting: Preheat oven to 160°C (fan-forced). Rub lamb with olive oil, salt, pepper, and herbs of your choice. Place in a roasting pan with a splash of stock or water. Cover with foil and roast for 3.5 to 4 hours until tender. Remove foil for the final 20–30 minutes to brown. Rest for 15 minutes before slicing.
