BBQ/Stovetop: Bring to room temperature. Cook over high heat for 4–5 minutes per side, then finish over lower heat for 4–6 minutes until internal temp reaches 55–60°C. Rest for 10 minutes before carving.
Oven: Sear in a hot pan for 3–4 minutes per side. Transfer to a 200°C oven and roast for 8–10 minutes or until desired doneness. Rest before slicing.
