Slow Cooker: Cut into chunks and season well. Sear in a hot pan until browned (optional, but adds flavour). Transfer to slow cooker with stock, vegetables, herbs or sauce of choice. Cook on low for 6–8 hours or high for 4–5 hours, until meat is tender.
Stovetop Braise: Sear and simmer in liquid for 2.5–3 hours on low heat, covered.
