Ingredients
- 1.5 - 2 kg beef brisket
- 1 tbsp olive oil (or a neutral oil like vegetable, canola)
- 1 BBQ Sauce
RUB:
- brown sugar
- paprika powder
- onion powder
- garlic powder
- cumin powder
- mustard powder
- salt
- black pepper
Instructions
- Mix the ‘Rub’ ingredients together and rub over the brisket. Leave for 30mins-24 hours in the fridge to allow the flavour to intensify, however, this is not mandatory.
- Pour BBQ sauce over and around your brisket.
- Leave in your slow cooker for 8-10 hours depending on the weight. The lighter your brisket, the less time.
- Remove your brisket from the slow cooker and place it onto a tray.
- Pour the leftover liquid from your slow cooker into a saucepan. Simmer over a medium-high heat and reduce until your liquid thickens. This should leave you will a syrup-like consistency (it will thicken as it cools).
- In the meantime, drizzle oil over your brisket and roast in a 200C/390F oven for 15mins until you start to notice brown spots.
- Remove from your oven and generously baste with your sauce. Place your brisket back in the oven for 5 minutes. Remove and baste once more and return your brisket to the oven for a further 5-10mins and wait for your brisket to caramelise.
- To Serve: Slice your brisket and serve with a macaroni salad or coleslaw side.
