Slow Oven Roasting: Preheat oven to 160°C (fan-forced). Rub lamb with olive oil, garlic, rosemary, salt and pepper. Place in a roasting dish with a splash of stock or water. Cover loosely with foil. Roast for 3.5 to 4 hours, removing foil in the last 30 mins to brown. Rest for 15–20 minutes before carving.
Tip: Serve with roasted veg and your favourite gravy or mint sauce.
